Ayam Penyet Recipe
Ayam Penyet Ingredients:
- 1 domestic chicken, cut into four parts.
- 200 ml of water.
- 2 cm ginger, bruised.
- 1 bay leaf.
- Enough oil, for frying.
Fine Seasoning:
- 4 cloves of garlic.
- 1 tsp coriander.
- 1 cm turmeric.
- Salt to taste.
Chili Sauce:
- 7 curly red chilies.
- 7 pieces of red chili.
- ½ red tomato.
- ½ tsp shrimp paste, burnt.
- 2 kaffir lime leaves, remove the stems.
- ½ tsp sugar (sliced brown sugar).
- Salt to taste.
- 2 stalks of basil take the leaves.
How to Make Ayam Penyet:
- First, mix it with water, ground spices, ginger, galangal, and bay leaf. Then cook over low heat while covered until the chicken is cooked and the spices are absorbed. Then lift.
- Next, fry the chicken until it turns yellow. Then remove and set aside.
- After that, puree all the chili ingredients, add the basil leaves, and mash coarsely. Then add the fried chicken, and press it with a pestle until the sauce sticks to the meat.
- Finally, serve the Ayam Penyet with tofu, tempeh, and other vegetables.
