Ingredients of Cucur Cake:

  • 200 gr brown sugar (finely sliced)
  • 250 ml water
  • 1 pandan leaf (knotted)
  • 125 gr rice flour
  • 100 gr Serbaguna wheat flour
  • ½ tsp salt
  • Vegetable oil enough for frying

How to make Cucur Cake:

  1. First, boil water and pandan leaves, then add brown sugar and cook until sugar dissolves. Remove and cool. The final result is ± 300 ml of sugar solution.
  2. Next, mix the rice flour, wheat flour, and salt. Then stir until smooth.
  3. After that, pour the sugar solution into the flour mixture and stir until well blended and the dough is perfectly smooth. Beat the dough with a hand whisk for ± 5 minutes. Then let the dough rest for 1 hour at room temperature.
  4. Next, heat the oil in a deep concave pan, and pour in 1 soup spoon (50ml) of the cucur cake batter. Use low heat.
  5. Then, cook until the surface is cooked while flushing with oil. Turn the shaver briefly then remove and drain. Do it until the dough runs out.
  6. Done, the traditional cucur cake is ready to be enjoyed.
